{"id":942,"date":"2025-05-01T22:12:18","date_gmt":"2025-05-01T20:12:18","guid":{"rendered":"https:\/\/worldfoodhacks.fr\/?p=942"},"modified":"2025-05-06T10:40:15","modified_gmt":"2025-05-06T08:40:15","slug":"chai-masala","status":"publish","type":"post","link":"https:\/\/worldfoodhacks.fr\/?p=942","title":{"rendered":"Cha\u00ef masala"},"content":{"rendered":"\n<p>Les th\u00e9iers poussent \u00e0 l&rsquo;\u00e9tat sauvage dans la r\u00e9gion d&rsquo;Assam, \u00e0 l&rsquo;extr\u00eame-Est de l&rsquo;Inde depuis l&rsquo;Antiquit\u00e9, mais historiquement, les Indiens consid\u00e9raient le th\u00e9 comme une plante m\u00e9dicinale plut\u00f4t que comme une boisson r\u00e9cr\u00e9ative. Dans les ann\u00e9es 1830, la Compagnie britannique des Indes orientales s&rsquo;inqui\u00e9ta du monopole chinois sur le th\u00e9. En effet, le th\u00e9 \u00e9tait massivement consomm\u00e9 en Grande-Bretagne, environ 1\/2 kg par personne et par an. Les colons britanniques avaient r\u00e9cemment remarqu\u00e9 l&rsquo;existence des th\u00e9iers d&rsquo;Assam et commenc\u00e8rent \u00e0 tenter de cultiver des plants, sans grand succ\u00e8s, m\u00eame si en 1839, la premi\u00e8re vente aux ench\u00e8res de th\u00e9 d&rsquo;Assam e\u00fbt lieu \u00e0 Londres. En parall\u00e8le, la qu\u00eate d&rsquo;autonomie du th\u00e9 britannique se poursuivait. Quelques ann\u00e9es plus tard, les anglais s&rsquo;infiltr\u00e8rent en Chine pour percer le proc\u00e9der de culture du th\u00e9 et en d\u00e9rober 20 000 plants de vari\u00e9t\u00e9 chinoise lors de ce qui fut appel\u00e9 le Grand Vol du th\u00e9 (<em>The Great Tea Robbery<\/em>). Une fois la technique maitris\u00e9e, les anglais purent constater que la vari\u00e9t\u00e9 d&rsquo;Assam donnait de meilleurs r\u00e9sultats car se pr\u00eataient mieux au climat de l&rsquo;Inde. C&rsquo;est \u00e0 ce moment qu&rsquo;ils la cultiv\u00e8rent massivement. Pendant ce temps, l&rsquo;importation de th\u00e9 britannique demeura toutefois chinoise jusqu&rsquo;\u00e0 repr\u00e9senter plus de 90 % du th\u00e9 consomm\u00e9 en Grande-Bretagne en 1870. Au terme des trente ann\u00e9es suivantes, ce chiffre est cependant tomb\u00e9 \u00e0 10 %, largement remplac\u00e9 \u00e0 part \u00e9gale par le th\u00e9 cultiv\u00e9 en Inde et \u00e0 Ceylan .<\/p>\n\n\n\n<p>Malgr\u00e9 ces succ\u00e8s, la consommation de th\u00e9 noir en Inde est rest\u00e9e faible, en d\u00e9pit de la cr\u00e9ation en 1881 de l&rsquo;Association Indienne du Th\u00e9 regroupant plusieurs producteurs. Il fallut attendre une campagne promotionnelle massive de l&rsquo;Association au d\u00e9but du XX<sup>\u00e8me<\/sup> si\u00e8cle, encourageant les usines, les mines et l&rsquo;industrie textile \u00e0 offrir des pauses th\u00e9 \u00e0 leurs ouvriers, pour le voir enfin devenir omnipr\u00e9sent. En parall\u00e8le, l&rsquo;Association a \u00e9galement soutenu de nombreux <em>chaiwalas <\/em>(vendeurs de th\u00e9) ind\u00e9pendants dans le r\u00e9seau ferroviaire en pleine expansion. Les <em>chaiwalas <\/em>servaient le th\u00e9 \u00e0 l&rsquo;indienne, c&rsquo;est \u00e0 dire avec de du lait, des \u00e9pices et du sucre ajout\u00e9s. L&rsquo;Association ne vit pas cette pratique d&rsquo;un tr\u00e8s bon \u0153il car cela r\u00e9duisait la consommation (et donc l&rsquo;achat) de feuilles de th\u00e9 par volume de liquide mais elle laissa faire et le chai tel qu&rsquo;on le trouve dans notre recette s&rsquo;est donc ensuite impos\u00e9 naturellement comme une boisson populaire. <\/p>\n\n\n<div class=\"real3dflipbook\"
