{"id":930,"date":"2025-05-03T21:00:11","date_gmt":"2025-05-03T19:00:11","guid":{"rendered":"https:\/\/worldfoodhacks.fr\/?p=930"},"modified":"2025-05-06T10:38:49","modified_gmt":"2025-05-06T08:38:49","slug":"havreflarn","status":"publish","type":"post","link":"https:\/\/worldfoodhacks.fr\/?p=930","title":{"rendered":"Havreflarn"},"content":{"rendered":"\n<p>L&rsquo;histoire du havreflarn est aussi difficile \u00e0 tracer qu&rsquo;il est r\u00e9pandu dans toute la Scandinavie : Danemark, Finlande, Norv\u00e8ge et bien s\u00fbr Su\u00e8de. La l\u00e9gende raconte que d\u00e9j\u00e0 au XV<sup>\u00e8me<\/sup> si\u00e8cle, l&rsquo;explorateur norv\u00e9gien Roald Amundsen les avait plac\u00e9s en premi\u00e8re position de sa liste pour partir en voyage, sans doute pour les m\u00eames propri\u00e9t\u00e9 de conservation en mer qu&rsquo;on pr\u00eate \u00e0 leurs cousins australiens, les <a href=\"https:\/\/worldfoodhacks.fr\/2025\/03\/31\/biscuits-anzac\/\">biscuits ANZAC<\/a>. <\/p>\n\n\n\n<p>En dehors de cela, aucune trace avant le d\u00e9but du XIX<sup>\u00e8me<\/sup> si\u00e8cle. L&rsquo;histoire des g\u00e2teaux y est intimement li\u00e9e \u00e0 celle du caf\u00e9 et quand la Su\u00e8de interdit par 5 fois l&rsquo;usage du caf\u00e9 entre 1756 et 1823 pour des raisons de sant\u00e9 publique, la vie des g\u00e2teaux s&rsquo;arr\u00eata. A partir des ann\u00e9es suivantes, le caf\u00e9 (bien que produit d&rsquo;importation) se popularisa \u00e9norm\u00e9ment jusque dans les campagnes, faisant de la Su\u00e8de d&rsquo;aujourd&rsquo;hui un des pays les plus consommateurs de caf\u00e9 (8,2kg\/habitant et par an). A la fin du XIX<sup>\u00e8me<\/sup> si\u00e8cle, la pause-caf\u00e9 fut \u00e9lev\u00e9e au rang de mode de vie b\u00e9n\u00e9fique et productif (jusqu&rsquo;\u00e0 figurer dans les contrats de travail !) sous forme de la tradition d\u00e9sormais mondialement connue de Fika. Lors de la Fika, le caf\u00e9 ne va pas sans ses g\u00e2teaux, dont le havreflarn. Celui-ci fait notamment partie d&rsquo;une autre tradition connexe, celle des (exactement) 7 biscuits (<em>sju sorters kakor<\/em>), n\u00e9e de rassemblements priv\u00e9s de femmes (<em>kafferep<\/em>) au XIX<sup>\u00e8me<\/sup> si\u00e8cle pour d\u00e9guster le caf\u00e9. Cette tradition existe d&rsquo;ailleurs toujours et veut que l&rsquo;on pr\u00e9pare exactement 7 biscuits en m\u00eame temps, un peu comme les bredele en Alsace (mais ceux-ci d\u00e9passent la centaine !). En dessous de 7, on \u00e9tait pingre et au-del\u00e0, on voulait frimer. <\/p>\n\n\n\n<p>Le havreflarn original ne contient pas de chocolat. C&rsquo;est Ik\u00e9a qui a populariser l&rsquo;id\u00e9e de souder 2 havreflarn avec du chocolat, lui donnant un cachet ind\u00e9niable et un gout moins sec.  Au vu de son succ\u00e8s et de ses propri\u00e9t\u00e9s gustatives, c&rsquo;est la version que nous avons retenue.<\/p>\n\n\n<div class=\"real3dflipbook\" id=\"71_69f5fd6162985\"
