Cela est d\u00fb en grande partie aux pr\u00e9ceptes en cours du Moyen \u00c2ge \u00e0 la fin du XIX<sup>\u00e8me<\/sup> si\u00e8cle, opposant les aliments \u00ab gras \u00bb, repr\u00e9sent\u00e9s par la viande, aux aliments \u00ab maigres \u00bb, essentiellement constitu\u00e9s de poisson. Et aujourd&rsquo;hui encore, non seulement les plats, mais aussi les menus et l&rsquo;encha\u00eenement des plats du repas traditionnel n&rsquo;envisagent g\u00e9n\u00e9ralement pas la cohabitation de ces deux aliments.<\/p>\n\n\n\n<p>A partir du XVIII<sup>\u00e8me<\/sup> si\u00e8cle, on voit n\u00e9anmoins apparaitre l&rsquo;ajout d&rsquo;anchois \u00e0 diverses sauces d\u00e9di\u00e9es aux viandes, notamment dans la cuisine du Pi\u00e9mont au Nord de l&rsquo;Italie mais aussi en France. Le veau \u00e0 la lyonnaise mais aussi la r\u00e9moulade sont de ces recettes. <\/p>\n\n\n\n<p>\u00c0 la m\u00eame \u00e9poque, le thon \u00e9tait consid\u00e9r\u00e9 comme une sp\u00e9cialit\u00e9 de poisson peu savoureuse, vendue principalement dans l&rsquo;huile ou le vinaigre. Frais, il \u00e9tait consid\u00e9r\u00e9 comme peu digeste et on conseillait de le faire mariner quelques heures dans un m\u00e9lange de sel avant cuisson pour qu&rsquo;il rappelle un peu le veau.<\/p>\n\n\n\n<p>Au XIX<sup>\u00e8me<\/sup> si\u00e8cle, face \u00e0 cette comparaison veau\/thon, et plut\u00f4t que de m\u00e9langer les deux, les cuisiniers fran\u00e7ais ont choisi de traiter le veau comme du thon. Le processus, dans la saumur et des anchois, \u00e9tait bien complexe pour contourner quelque chose qui allait de soi&#8230; Il fallut attendre 1862 qu&rsquo;un gastro-ent\u00e9rologue milanais publie un ouvrage d\u00e9di\u00e9 aux estomacs fragiles pour qu&rsquo;on abandonne l&rsquo;id\u00e9e de faire ressembler le veau au thon et qu&rsquo;on incorpore les deux dans un m\u00eame plat.<\/p>\n\n\n\n<p>Ce plat a depuis subi plusieurs modifications mineures pour devenir un plat facile \u00e0 r\u00e9aliser. Nous proposons ici deux recettes en une : la traditionnelle \u00e0 base de r\u00f4ti cuit \u00e0 basse temp\u00e9rature avec son thon poch\u00e9&#8230; et le food hack pour une pr\u00e9paration en 15min max.
