Si on veut vraiment chercher loin, on tomberait deux si\u00e8cles avant J-C  dans&nbsp;la cuisine m\u00e9diterran\u00e9enne de&nbsp;Caton l&rsquo;Ancien. Celui-ci \u00e9voque une recette de \u00ab&nbsp;ballons&nbsp;\u00bb faits de boules de farine\/fromage, frites, et servies avec une p\u00e2te \u00e0 tartiner au&nbsp;miel&nbsp;et&nbsp;graines de pavot. Il est probable que les bu\u00f1uelos viennent d&rsquo;Espagne quand au Moyen-Age, les maures arabes y r\u00e9gnaient. Le plat s&rsquo;est ensuite naturellement export\u00e9 via les conquistadors vers toute l&rsquo;Am\u00e9rique latine et du Sud puis vers la Californie au XIX\u00e8me si\u00e8cle. <\/p>\n\n\n\n<p>La raison pour laquelle nous avons retenu la version colombienne est que, contrairement \u00e0 nombre de variantes de beignets, on retrouve non seulement la forme de ballon de l&rsquo;origine mais aussi l&rsquo;aspect fromager qui s&rsquo;est perdu avec le temps. Les bu\u00f1uelos colombiens sont plus particuli\u00e8rement d\u00e9gust\u00e9s \u00e0 No\u00ebl avec diverses cr\u00e8mes sucr\u00e9es hispaniques.
