Exit donc la viande et les \u0153ufs mais les poulaillers et les \u00e9tables continuaient de tourner, accumulant leurs produits non-consomm\u00e9s mais stock\u00e9s. Le plat permettait donc de liquider un peu de ce stock en int\u00e9grant la viande et des \u0153ufs durs dans une p\u00e2te cuite au four en chausson. Il fallut attendre la d\u00e9mocratisation de la charcuterie viennoise pour que le plat prenne l&rsquo;aspect qu&rsquo;il a aujourd&rsquo;hui en incorporant plut\u00f4t de la chair \u00e0 saucisse.<\/p>\n\n\n\n<p>Para\u00eet-il qu&rsquo;alors on pensait que le consommer le Vendredi Saint garantissait un an sans morsure de serpents.
