{"id":815,"date":"2025-04-20T22:28:14","date_gmt":"2025-04-20T20:28:14","guid":{"rendered":"https:\/\/worldfoodhacks.fr\/?p=815"},"modified":"2025-05-06T12:25:36","modified_gmt":"2025-05-06T10:25:36","slug":"focaccia","status":"publish","type":"post","link":"https:\/\/worldfoodhacks.fr\/?p=815","title":{"rendered":"Focaccia"},"content":{"rendered":"\n<p>La plupart des historiens pensent que son origine remonte soit aux \u00c9trusques du centre-nord de l&rsquo;Italie, avant la formation de l&rsquo;Empire romain, soit \u00e0 la Gr\u00e8ce antique, au d\u00e9but du premier mill\u00e9naire avant J.-C. \u2013 bien que des galettes similaires soient \u00e9galement fabriqu\u00e9es depuis longtemps au Moyen-Orient. Identifier la culture qui a pr\u00e9par\u00e9 ce pain pour la premi\u00e8re fois est un exercice inutile, mais on sait que des recettes similaires existent en Turquie, en Gr\u00e8ce, en Italie, en France et en Espagne.<\/p>\n\n\n\n<p>Le nom \u00ab&nbsp;focaccia&nbsp;\u00bb vient du latin \u00ab&nbsp;panis focacius&nbsp;\u00bb,&nbsp;qui signifie \u00ab&nbsp;pain de la chemin\u00e9e&nbsp;\u00bb, car la focaccia \u00e9tait traditionnellement cuite au charbon \u00e0 l&rsquo;\u00e9poque romaine.&nbsp;Sa recette, \u00e0 l&rsquo;\u00e9poque, se composait de farine grossi\u00e8re, d&rsquo;huile d&rsquo;olive, d&rsquo;eau, d&rsquo;une tr\u00e8s petite quantit\u00e9 de levure et de sel, et \u00e9tait probablement assez simple. On l&rsquo;utilisait comme pain \u00e0 tremper, g\u00e9n\u00e9ralement d\u00e9chir\u00e9 \u00e0 la main et tremp\u00e9 dans des soupes sal\u00e9es \u00e0 base d&rsquo;eau, de vinaigre et parfois d&rsquo;huile d&rsquo;olive (essentiellement ce que l&rsquo;on sert aujourd&rsquo;hui dans la plupart des restaurants italiens en attendant son repas).&nbsp;<\/p>\n\n\n\n<p>Lorsque les Romains commenc\u00e8rent \u00e0 \u00e9tendre leur empire \u00e0 la France et \u00e0 l&rsquo;Espagne, ils apport\u00e8rent la focaccia avec eux, r\u00e9pandant sa popularit\u00e9 dans toute l&rsquo;Europe continentale. Ce pain \u00e9tait principalement un repas de pauvres, cuit pour nourrir les pauvres et les paysans. Le \u00ab\u00a0<em>pan de hogaza<\/em>\u00a0\u00bb espagnol, une variante de la focaccia, est n\u00e9 de cette fa\u00e7on, tout comme la fougasse, dans les r\u00e9gions fran\u00e7aises de Bourgogne, de Provence et du Languedoc.&nbsp;<\/p>\n\n\n\n<p>Au d\u00e9but du XXe si\u00e8cle, de nombreux immigrants europ\u00e9ens sont partis pour l&rsquo;Am\u00e9rique du Sud et les \u00c9tats-Unis avec la recette de la focaccia sous le bras et sont devenus plus exp\u00e9rimentaux avec leurs garnitures :&nbsp;aujourd&rsquo;hui, les versions sal\u00e9es de la focaccia sont garnies de romarin, de sauge, d&rsquo;ail, de fromage et d&rsquo;oignons, tandis que les vari\u00e9t\u00e9s sucr\u00e9es peuvent \u00eatre garnies de miel, de raisins secs, de sucre et de zeste de citron.<\/p>\n\n\n\n<p>A noter enfin que les petites empreintes criblant le dessus du pain servent en r\u00e9alit\u00e9 un but : emp\u00eacher l&rsquo;apparition de grosses bulles \u00e0 la cuisson !<\/p>\n\n\n<div
