Consolation, elle n&rsquo;est pas allemande non plus bien que le nom provienne de l\u00e0 (\u00ab\u00a0<em>Sauerkraut<\/em>\u00ab\u00a0, chou acide). Il est difficile de dater le processus de fermentation du chou qui est caract\u00e9ristique de ce plat, tant il est r\u00e9pandu dans le monde. On le trouve par exemple \u00e0 l&rsquo;\u00e9poque de la grande muraille de Chine mais l&rsquo;origine la plus probable date de l&#8217;empire romain ! Pour troubler les cartes, il n&rsquo;y aurait pas forc\u00e9ment une origine unique de la choucroute, les pays slaves ayant pu la \u00ab\u00a0d\u00e9couvrir\u00a0\u00bb par eux-m\u00eames ult\u00e9rieurement. Partager tous les noms de la choucroute dans tous les pays d&rsquo;Europe occidentale et de l&rsquo;Est rendrait cette publication bien longue car chacun a la sienne. Gageons que ceux qui ont le mieux r\u00e9ussi \u00e0 faire perdurer la tradition son les Allemands et les Alsaciens. Toutefois, il existe une diff\u00e9rence entre les deux : la choucroute alsacienne est cuite au vin blanc, du fait des beaux vignobles de la r\u00e9gion alors que l&rsquo;allemande ne l&rsquo;est qu&rsquo;\u00e0 la bi\u00e8re. Dans notre recette, nous mettons comme ici, fr\u00e9quemment les deux: pas de jaloux ! <\/p>\n\n\n\n<p>Denier point, la choucroute au sens stricte n&rsquo;est que la partie \u00ab\u00a0chou\u00a0\u00bb du plat. Ce qu&rsquo;on y ajoute, comme les nombreux types de saucisses (lorraine, viennoise, &#8230;) et salaisons (coti sal\u00e9, palette fum\u00e9e, kassler, &#8230;), font que ce plat devient la choucroute dite \u00ab\u00a0garnie\u00a0\u00bb (m\u00eame si d\u00e9sormais cela d\u00e9crit la choucroute tout court). On passera sur la choucroute aux fruits de mer, poisson, et autres originalit\u00e9s. Nan mais oh, on est o\u00f9 l\u00e0 ?
