On le retrouve sous de nombreuses formes au Moyen-Orient , parfois sous son autre nom, mouttabal. Le terme arabe pour ce plat signifie \u00ab papa choy\u00e9 \u00bb, la l\u00e9gende raconte qu&rsquo;il s&rsquo;agirait d&rsquo; un sultan g\u00e2t\u00e9 par une concoction invent\u00e9e par un membre de son harem. <\/p>\n\n\n\n<p>Nous avons choisi de concocter une version hybride entre le baba ganush et le muttabal mais ce plat existe dans tout le moyen orient et ce jusqu&rsquo;en Turquie o\u00f9 il porte le m\u00eame nom. Une version libanaise omet le tahini, tandis que dans certaines r\u00e9gions de Syrie , il est remplac\u00e9 par du yaourt . La saveur fum\u00e9e essentielle du baba ganush provient de la cuisson de l&rsquo;aubergine sur des charbons ardents ou dans un four tr\u00e8s chaud jusqu&rsquo;\u00e0 ce qu&rsquo;elle s&rsquo;affaisse, ce qui permet \u00e0 sa chair de se m\u00e9langer facilement aux autres ingr\u00e9dients. On le sert frais ou \u00e0 temp\u00e9rature ambiante avec du pain pita ou d&rsquo;autres pains plats.<\/p>\n\n\n<div class=\"real3dflipbook\" id=\"46_69f5fd8d9f4b0\"
