Il est le produit d\u2019une \u00ab\u2009fermentation\u2009\u00bb qui lui conf\u00e8re toutes ses vertus hors du commun. Il faut pour cela laisser vieillir des t\u00eates d&rsquo;ail blanc dans un espace clos qui pr\u00e9sente une humidit\u00e9 de 70 % \u00e0 90 % et une temp\u00e9rature de 60\u00b0 \u00e0 80\u00b0C. Le processus dure environ 3 semaines et est ensuite suivi de 2 semaines de s\u00e9chage.
