Les variantes peuvent ajouter des carottes, des poivrons, des pommes de terre, des pignons de pin et des raisins secs. Une version de la ville de Palerme ajoute du poulpe , et une recette aristocratique comprend du homard , de l&rsquo;espadon garnis d&rsquo;asperges sauvages, d&rsquo;\u0153ufs, de thon s\u00e9ch\u00e9s r\u00e2p\u00e9s et des crevettes. Ce sont des exceptions \u00e0 la r\u00e8gle g\u00e9n\u00e9rale d&rsquo;un rago\u00fbt ou d&rsquo;une salade de l\u00e9gumes cuits aigre-doux.<\/p>\n\n\n\n<p>La caponata est historiquement associ\u00e9e \u00e0 la communaut\u00e9 juive de Sicile du premier si\u00e8cle en y m\u00e9langeant les influences arabes, espagnoles et fran\u00e7aises. Elle est parfois encore appel\u00e9e \u00ab\u00a0caponata alla giudia\u00a0\u00bb (\u00ab\u00a0\u00e0 la juive\u00a0\u00bb). Elle fut d&rsquo;ailleurs int\u00e9gr\u00e9e au repas de Shabbat et devint un plat principal \u00e0 compter du XVIII<sup>\u00e8me<\/sup> si\u00e8cle. Il fallut attendre la triste ann\u00e9e 1943 de l&rsquo;exil des juifs de Sicile pour que les r\u00e9gions continentales de l&rsquo;Italie d\u00e9couvrent ce plat. C&rsquo;est ainsi qu&rsquo;on en trouve une version napolitaine: la ciambotta. On retrouve les influences arabes de la caponata dans des \u00e9quivalents tunisiens et marocains, respectivement la chaktchouka et le <a
