Ils portent le nom Anzac car ils sont intimement li\u00e9s au corps d&rsquo;arm\u00e9e australien\/n\u00e9o-z\u00e9landais (ANZAC) cr\u00e9\u00e9 en 1914. Traditionnellement, il s&rsquo;agit d&rsquo;un biscuit sucr\u00e9 sans \u0153uf \u00e0 base d&rsquo;avoine et de <em>golden syrup<\/em> anglais mais ces biscuits sucr\u00e9s ne sont pas les m\u00eames que ceux qui \u00e9taient distribu\u00e9s aux soldats de Gallipoli. Ces derniers, appel\u00e9s biscuits de mer, \u00e9taient beaucoup plus durs; au point qu&rsquo;ils devaient souvent \u00eatre rapp\u00e9s dans l&rsquo;eau pour \u00eatre consomm\u00e9s en porridge et servaient m\u00eame de cadre photo ou de support d&rsquo;\u00e9criture !<\/p>\n\n\n\n<p>\u00c0 partir des ann\u00e9es 1920, les livres de recettes australiens incluaient presque toujours des biscuits Anzac, mais on ignore pr\u00e9cis\u00e9ment comment cette recette a \u00e9t\u00e9 associ\u00e9e \u00e0 l&rsquo;ANZAC, ou \u00e0 l&rsquo;une ou l&rsquo;autre des Guerres Mondiales. Leur dur\u00e9e de conservation n&rsquo;est pas aussi longue que celle des biscuits de mer, mais ils se conservent assez longtemps. Il est donc possible qu&rsquo;ils aient \u00e9t\u00e9 reconnus comme un attention id\u00e9ale que les familles et les organisations caritatives envoyaient aux soldats outre-mer.<\/p>\n\n\n\n<p>Chaque ann\u00e9e, la tradition australienne veut qu&rsquo;on les pr\u00e9pare lors de la journ\u00e9e de comm\u00e9moration de l&rsquo;ANZAC, le 25 avril. Chacun a sa recette pr\u00e9f\u00e9r\u00e9e et la question de savoir s&rsquo;ils doivent \u00eatre servis croquants ou moelleux suscite d&rsquo;innombrables d\u00e9bats, encore aujourd&rsquo;hui&#8230; <\/p>\n\n\n\n<p>A noter que nous leur avons ajout\u00e9 de l&rsquo;\u0153uf pour \u00e9viter l&rsquo;effritement et remplac\u00e9 le <em>golden syrup<\/em> par de la m\u00e9lasse de grenade, facilement trouvable en \u00e9picerie turque.
