A la base, les keftedes sont des boulettes de viande grecques servies fa\u00e7on mezz\u00e9s. C&rsquo;est compter sans l&rsquo;histoire de Santorin, intimement li\u00e9e \u00e0 celle de la tomate.<\/p>\n\n\n\n<p>Lorsque la plupart des \u00e9glises orthodoxes de Russie ont ferm\u00e9 apr\u00e8s la r\u00e9volution de 1917, les moines grecs orthodoxes de Santorin ont perdu le plus grand march\u00e9 de leur production viticole. Cherchant alors une alternative, ils ont opt\u00e9 pour leurs d\u00e9licieuses tomates cerises locales, d&rsquo;une douceur et d&rsquo;un go\u00fbt uniques, car issues d&rsquo;un climat id\u00e9al et d&rsquo;un sol volcanique. C&rsquo;est ainsi que la tomate de Santorin est devenue c\u00e9l\u00e8bre et tr\u00e8s consomm\u00e9e sur l&rsquo;\u00eele sous diff\u00e9rentes formes. Sa chair sucr\u00e9e est parfaite pour \u00eatre \u00e9cras\u00e9e et transform\u00e9e en un d\u00e9licieux concentr\u00e9 de tomates, un produit d&rsquo;exportation tr\u00e8s populaire pendant de nombreuses ann\u00e9es, apportant une stabilit\u00e9 financi\u00e8re \u00e0 Santorin. Malheureusement, en 1956, un terrible tremblement de terre d\u00e9truisit une grande partie de l&rsquo;\u00eele, et le secteur de la conserve ne s&rsquo;en remit jamais vraiment. La tomate \u00e9tant pr\u00e9sente et les gens \u00e9tant pauvres, ils l&rsquo;utilis\u00e8rent beaucoup en remplacement de la viande dans les keftedes, parfois m\u00eame en y int\u00e9grant les tiges r\u00e9cup\u00e9r\u00e9es en sortie d&rsquo;usine. Ceci finit de d\u00e9mocratiser les domatokeftedes de Santorin. Ces boulettes de tomates et farine frites se sont depuis export\u00e9es dans toute la Gr\u00e8ce et prirent diff\u00e9rentes formes, notamment en ajoutant de la feta, de la bi\u00e8re, de la levure
