Les pharaons et les paysans mangeaient le m\u00eame pain, souvent avec la m\u00eame recette. Le bl\u00e9 \u00e9tait si important qu&rsquo;il servit de monnaie d&rsquo;\u00e9change dans les villes pendant des milliers d&rsquo;ann\u00e9es.<br>L\u2019une des vari\u00e9t\u00e9s anciennes de pain \u00e9gyptien est appel\u00e9e \u00ab\u00a0Aishe Batte\u00a0\u00bb ou \u00ab\u00a0Aish Baladi\u00a0\u00bb. Ce pain \u00e9tait fabriqu\u00e9 \u00e0 partir d\u2019un ancien type de bl\u00e9 appel\u00e9 amidonnier ou, moins souvent, d\u2019orge. Les pains \u00e9taient pr\u00e9par\u00e9s dans des fours en argile fabriqu\u00e9s \u00e0 partir de la boue du Nil. Pour de nombreux \u00c9gyptiens de la classe ouvri\u00e8re, le pain \u00e9tait souvent le seul repas de la journ\u00e9e : les agriculteurs travaillant dans les champs emportaient souvent leur pain avec eux et en arrachaient des morceaux pour les grignoter et le repas du soir pouvait consister en du pain accompagn\u00e9 d\u2019une tasse de th\u00e9. On pouvait \u00e9galement le consommer agr\u00e9ment\u00e9 de miel, de l\u00e9gumes, d&rsquo;autres c\u00e9r\u00e9ales, d&rsquo;huile, d&rsquo;\u00e9pices et d&rsquo;herbes ou d&rsquo;un peu de viande saignante. <\/p>\n\n\n\n<p>Aujourd&rsquo;hui, le pain Aishe Batte est souvent servi accompagn\u00e9 de sa dukkah. Celle-ci est un m\u00e9lange sal\u00e9-poivr\u00e9 de graines : amandes, noisettes, coriandre, cumin, s\u00e9same. On trempe d&rsquo;abord le pain Aishe Batte dans de l&rsquo;huile d&rsquo;olives avant de le tremper dans la dukkah puis de le manger.
