Son nom lui vient du mandarin \u00ab\u00a0lami\u00e0n\u00a0\u00bb, signifiant \u00ab\u00a0nouilles tir\u00e9es\u00a0\u00bb, technique de pr\u00e9paration de la communaut\u00e9 musulmane de la r\u00e9gion de Gansu, au centre-nord de la Chine, bien que cette technique leur pr\u00e9\u00e9xistait. Il faudra attendre la fin de la deuxi\u00e8me guerre mondiale pour voir le ramen se populariser au Japon car le riz \u00e9tait alors plus dur \u00e0 trouver que les nouilles. Une quinzaine d&rsquo;ann\u00e9es plus tard, les premiers ramens lyophilis\u00e9s apparaissent et il faudra attendre le d\u00e9but des ann\u00e9es 70&rsquo;s pour voir leur explosion au sein du grand public via les bols jetables bien connus aujourd&rsquo;hui qui permirent alors de concurrencer McDonalds.<\/p>\n\n\n\n<p>Il existe une vingtaine de recettes sp\u00e9cifiques d&rsquo;une r\u00e9gion du Japon mais on peut les classer en 4 types selon le bouillon utilis\u00e9 : bouillon clair (\u00ab\u00a0shio ramen\u00a0\u00bb), miso (\u00ab\u00a0miso ramen\u00a0\u00bb), soja (\u00ab\u00a0shoyu ramen\u00a0\u00bb) et curry (\u00ab\u00a0kare ramen\u00a0\u00bb). Une autre mani\u00e8re de les classer est selon l&rsquo;ingr\u00e9dient principal. Nous avons choisi de pr\u00e9parer un \u00ab\u00a0gyuniku ramen\u00a0\u00bb (boeuf grill\u00e9) mais on trouve par exemple des ramens aux l\u00e9gumes (\u00ab\u00a0yasa\u00ef ramen\u00a0\u00bb) ou au poulpe (\u00ab\u00a0tako ramen\u00a0\u00bb).<\/p>\n\n\n\n<p>Le ramen est un arch\u00e9type de la politesse japonaise. Pour le japonais, faire du bruit en mangeant est d&rsquo;une grande impolitesse mais ne pas honorer le cr\u00e9ateur d&rsquo;un plat est encore plus malpoli. Aussi, les chinois mangeant les ramen en faisant beaucoup de bruit d&rsquo;aspiration, les japonais s&rsquo;imposent de faire de m\u00eame malgr\u00e9 leurs propres valeurs, summum de la politesse ! Nous avons pu nous en rendre compte dans un restaurant japonais o\u00f9 nous nous efforcions de passer inaper\u00e7us en d\u00e9gustant religieusement notre ramen et o\u00f9 un autre client nous a
