Son nom vient tout simplement du four en argile dans lequel il est cuit (\u00ab\u00a0taboon\u00a0\u00bb), qu&rsquo;on appelle aussi ou \u00ab\u00a0tanuur tandoori\u00a0\u00bb. Ce four \u00e9tait souvent un four commun dans les villages palestiniens o\u00f9 il a jou\u00e9 un r\u00f4le important dans la sociabilisation des femmes qui allaient pr\u00e9parer le pain taboon. Le pain ressemble aux diff\u00e9rents pains tandoori que l&rsquo;on trouve dans de nombreuses r\u00e9gions d&rsquo;Asie. Dans la cuisine palestinienne, o\u00f9 il est parfois rempli d&rsquo;un m\u00e9lange d&rsquo;\u00e9pinards et d&rsquo;oignons ou d&rsquo;un m\u00e9lange de fromage en grains et d&rsquo;oignons, voire de raisins secs et de pignons de pin, il est cuit sur un lit de petites pierres chaudes dans le four.
