Ceux-ci \u00e9taient souvent priv\u00e9s des morceaux \u00ab comestibles \u00bb des animaux et des l\u00e9gumes par les propri\u00e9taires terriens et se contentaient des restes. La racine de manioc , plus connue sous le nom de tapioca, ne fait pas exception. Cet aliment de base pendant la colonisation portugaise du Br\u00e9sil \u00e9tait pel\u00e9, r\u00e2p\u00e9, tremp\u00e9 puis s\u00e9ch\u00e9 afin de fabriquer une grande vari\u00e9t\u00e9 de plats devenus aujourd&rsquo;hui des plats traditionnels br\u00e9siliens. La fabrication produisait \u00e9galement une fine poudre blanche consid\u00e9r\u00e9e comme immangeable et qui n&rsquo;\u00e9tait autre que&#8230; l&rsquo;amidon ! Les esclaves rassemblaient ces r\u00e9sidus, en faisaient des boules et les cuisaient. A l&rsquo;\u00e9poque, on n&rsquo;y ajoutait pas encore de fromage ni de lait, r\u00e9serv\u00e9 aux esclavagistes. En bref, il s&rsquo;agissait d&rsquo;amidon cuit et il faudra attendre la fin de l&rsquo;esclavagisme au XIX\u00e8me si\u00e8cle pour que, dans la capitale de production laiti\u00e8re du pays, on y
