Au XVIIe si\u00e8cle, sous Joseon, avec l\u2019arriv\u00e9e des piments portugais, na\u00eet la&nbsp;ssamjang&nbsp;\u2013 litt\u00e9ralement \u00ab\u00a0sauce \u00e0 ssam\u00a0\u00bb (wraps de laitue) \u2013, un m\u00e9lange rustique de doenjang sal\u00e9, gochujang optionnel, ail sauvage et herbes comme le kkaennip (perilla), con\u00e7u pour tremper les grillades communautaires de samgyeopsal lors des f\u00eates villageoises. N\u00e9e de la survie aux hivers rigoureux, elle \u00e9quilibre sel ferment\u00e9, sucr\u00e9 du miel de riz et piquant subtil, masquant les saveurs brutes des cochons r\u00f4tis ou tofu fum\u00e9.<\/p>\n\n\n\n<p>Affin\u00e9e au XVIIIe si\u00e8cle dans des grimoires culinaires comme le&nbsp;<em>Siuijeonseo<\/em>, la ssamjang int\u00e8gre sauce soja (ganjang), gingembre pour la chaleur et huile de s\u00e9same pour l\u2019onctuosit\u00e9, devenant indispensable aux banquets nobles comme aux repas paysans.
