{"id":1527,"date":"2025-09-20T08:33:03","date_gmt":"2025-09-20T06:33:03","guid":{"rendered":"https:\/\/worldfoodhacks.fr\/?p=1527"},"modified":"2025-09-20T08:33:03","modified_gmt":"2025-09-20T06:33:03","slug":"quiche-lorraine","status":"publish","type":"post","link":"https:\/\/worldfoodhacks.fr\/?p=1527","title":{"rendered":"Quiche lorraine"},"content":{"rendered":"\n<p>Les premi\u00e8res mentions \u00e9crites de la quiche lorraine datent de 1586, \u00e0 la cour du duc Charles III de Lorraine, qui en \u00e9tait friand. <a href=\"https:\/\/labonnevague.com\/fromage-sabstenir-dans-lhistoire-de-la-quiche-lorraine\/\" target=\"_blank\" rel=\"noreferrer noopener\"><\/a>Son nom vient de l\u2019allemand \u00ab\u202fKuchen\u202f\u00bb (g\u00e2teau), ou du dialecte francique lorrain \u00ab\u202fK\u00fcchen\u202f\u00bb. A l&rsquo;image de la tarte flamb\u00e9e alsacienne, elle \u00e9tait \u00e0 l\u2019origine confectionn\u00e9e dans les campagnes, lors de la cuisson du pain, \u00e0 partir d\u2019une fine p\u00e2te \u00e0 pain garnie d\u2019une migaine (\u0153ufs battus et cr\u00e8me) formant la base du plat depuis des si\u00e8cles. Les m\u00e9nag\u00e8res profitaient alors du four \u00e0 pain du village pour cuire leurs quiches, en utilisant les produits disponibles \u00e0 la ferme.  <\/p>\n\n\n\n<p><a href=\"https:\/\/agap-pro.com\/la-quiche-lorraine-origines-et-traditions\/\" target=\"_blank\" rel=\"noreferrer noopener\"><\/a>La recette s\u2019est ensuite enrichie au XIX\u1d49 si\u00e8cle avec l\u2019ajout syst\u00e9matique du lard fum\u00e9. C&rsquo;est \u00e0 la m\u00eame \u00e9poque que le plat s&rsquo;est diffus\u00e9 au reste du territoire, principalement Paris, mais pour de tristes raisons : l\u2019annexion de la l&rsquo;Alsace-Lorraine par la Prusse suite \u00e0 la guerre franco-allemande de 1870. Le trait\u00e9 de Francfort qui mit fin \u00e0 cette guerre <a href=\"https:\/\/journals.openedition.org\/rh19\/7115\" target=\"_blank\" rel=\"noreferrer noopener\"><\/a>accordait en effet aux habitants une \u00ab\u202fclause d\u2019option\u202f\u00bb\u202f: ils pouvaient conserver la nationalit\u00e9 fran\u00e7aise, mais \u00e0 condition de quitter le territoire annex\u00e9 avant le octobre 1872.
