La plupart des pays m\u00e9diterran\u00e9ens ont en effet un plat similaire, semblable \u00e0 une omelette ; en Espagne, on trouve la tortilla, tandis que dans la cuisine persane moderne, on trouve le kuku, un plat \u00e0 base d&rsquo;\u0153ufs et d&rsquo;herbes. Un plat tr\u00e8s similaire, compos\u00e9 d&rsquo;\u0153ufs, de fromage et de l\u00e9gumes, \u00e9tait d\u00e9j\u00e0 connu dans la Rome antique. Certaines sources sugg\u00e8rent qu&rsquo;il pourrait \u00eatre arriv\u00e9 en Italie depuis\u00a0l&rsquo;ancienne Perse . Trouver l&rsquo;origine de ce plat dans une r\u00e9gion italienne particuli\u00e8re est un d\u00e9fi, car il est populaire dans toute l&rsquo;Italie et il existe des milliers de recettes et de variantes.<\/p>\n<p>Pour notre foodhack, nous avons fait le choix de r\u00e9aliser un mix entre les versions \u00ab\u00a0<em>alla calabrese<\/em>\u00a0\u00bb (oignons), \u00ab\u00a0<em>alla toscanese<\/em>\u00a0\u00bb (patates roses) et \u00ab\u00a0<em>alla piemontese<\/em>\u00a0\u00bb (saucisson ou pancetta). Il existe cependant des versions plus surprenantes comme la frittata \u00ab\u00a0<em>alla pizzaiola<\/em>\u00a0\u00bb (dont l&rsquo;omelette sert de base \u00e0 un tomate-mozza), \u00ab\u00a0<em>alla napoletana<\/em>\u00a0\u00bb (avec des spaghettis cuits dans l&rsquo;omelette), \u00ab\u00a0<em>rafana<\/em>\u00a0\u00bb (raifort rustique) ou \u00ab\u00a0<em>alla pugliese<\/em>\u00a0\u00bb (menthe). Pour plus de simplicit\u00e9, la fritta \u00ab\u00a0<em>distasio<\/em>\u00a0\u00bb ne comporte quant-\u00e0-elle que des l\u00e9gumes r\u00f4tis.<\/p>\n<p>A noter que la frittata s&rsquo;est invit\u00e9e dans plusieurs proverbes italien. On ne dit en effet pas \u00ab\u00a0le mal est fait\u00a0\u00bb mais \u00ab\u00a0la frittata est faite\u00a0\u00bb. De m\u00eame on ne dit pas \u00ab\u00a0d\u00e9tourner la conversation\u00a0\u00bb mais \u00ab\u00a0retourner la frittata\u00a0\u00bb. C&rsquo;est dire si ce plat est profond\u00e9ment ancr\u00e9 dans les traditions. On c\u00e9l\u00e8re d&rsquo;ailleurs toujours chaque ann\u00e9e le 10 aout, la tradition du XVIe si\u00e8cle consistant \u00e0 r\u00e9aliser une frittata de 1000 \u0153ufs en l&rsquo;honneur de Charles Quint d&rsquo;Espagne.
